    The Sommelier

    Rodolfo Tristão is the mentor of AUGE’s wine cellar, whose careful selection provides a road map to the outstanding terroirs made in Portugal.

    With over 20 years of experience in the world of wines, “his great passion”, Rodolfo is an expert in hotels and restaurants and has worked with top national chefs.

  • The Cocktail Bar

    The AUGE Cocktail Bar is an embassy of Port wine in the city with the same name, which celebrates it at all times.

    Ruby, LBV, Dry White, Lágrima White or Rosé are the prevailing colours, on an expedition of a variety of signature cocktails that explore less common techniques such as cold infusion, homemade syrups produced in vacuum and at low temperatures, tropical fruit foam, with the expertise of preparing a special order and the informality of one constantly in search of new experiences.

    The Mixologist

    Pedro Paulo has a degree in Hotel Management and WSET Level 2, but his specialty and passion is mixology.

    With over 16 years of experience, he has already applied his techniques and investigated the different bar and cocktail practices in more than 30 countries, holding a deep knowledge of the perception of the professional traveler, to which he adds his dedication to the art of cocktails, without ever forget the Portuguese traditions and the quality of the products.

    In recent years, his address is London, the city where he took on supervisory functions at Coburg Bar, The Connaught Hotel and, currently, he is the Beverage Manager of One Aldwych Hotel, which serves as inspiration for the creation of an Author's Cocktail Letter and a Charter of Barque is not found anywhere else in Portugal.
